Turning Vegetarian – Jalapeño Tofu Scramble

Tofu is such an up in the air ingredient for some people. It’s something that puts a lot of people off as either a sub par “meat replacement” or just “totally bland”. I, on the other hand, find it both fun to work with and delicious- you just have to know what you’re doing.

That said, this recipe was a little…bland. I think if/when I try it again I am going to marinade my tofu overnight in either a dry rub or a sauce of some sort. It needed more time to take on some of the flavors this recipe put forward, but I think the theory is here and I’m definitely going to make a habit of having the ingredients at the ready! Without further adieu, the instructions below!

Serves: 3-4
Start to finish: 20 minutes
Cost per serving: ≈ $2.25

Nutritional values (will vary depending on brands)- Per serving: 143 calories, 8.5g fat (1.1g saturated fat), 0mg cholesterol, 30.8mg sodium, 9g carbohydrates, 2.2g fiber, 10.8g protein


 1 16-18 ounce package of organic extra-firm tofu
 1 tbsp. olive oil
 2 jalapeños, diced
 1/2 white onion, diced
 2 cloves garlic, diced
 1 tsp. chili powder
 1/2 tsp. cumin powder
 1/2 tsp. dried oregano, crushed
 1/4 tsp. salt
 1 c. chopped roma tomato
 1 tbsp. fresh squeezed lime juice
 Garnish; fresh cilantro leaves


1. Drain tofu, cut in half (horizontally), squeeze as much liquid out as possible, pat dry with a paper towel and crumble into a medium bowl.
2. In a skillet heat oil and saute  jalapeños, onion and garlic until translucent. Add chili powder, cumin, oregano and salt; cook for approximately 30 seconds.
3. Add crumbled tofu to chili mixture. Heat for approximately 5 mintues.
4. Stir in tomatoes and lime juice and serve.
5. Garnish with fresh cilantro leaves and enjoy!

30 day photo challenge – November 15-17

And so set (3) of my thirty day project is revealed- and as previously stated, make sure to keep up with Rob for the sister part of these prompts!

When I first saw this prompt it brought me back to my childhood. When I was in elementary school I had a purple cotton shirt and shorts that I adored. Additionally, I paired this outfit with purple high tops (like these!!). Unfortunately those items are long since retired. Instead, my mom told me she was making eggplant tacos (surprisingly delicious!) and I couldn’t help but use it for today.

I had something different planned for this, but as I forgot about my Yelp! Elite event it didn’t come through. Instead I ended up at the bar. I was going for a different angle, but with the low light, no ability to move around (crowded bar with a 50mm prime), etc. it just didn’t happen. All in all, though, I think I like it.

As soon as I came across this prompt I was worried. Fortunately a friend (and the weather!) came through. I live in the “Sunshine State”, but it rains more than pretty much anywhere else I’ve ever lived- Thailand being the obvious exception. So, this morning’s rain delivered a subtle hat’s off to the ironic and gave me a great way to nearly hit my 33% marker!

30 day photo challenge – November 12-14

delicious; อร่อย

This was taken at Wat Mongkolratanaram (the local Thai temple). It is, without a doubt, the closest I’ve been to Thailand since I got home. The food is incredible the volunteers are either Thai, people who lived there or married into Thai families, etc. They are friendly, informed and so, so, so happy. It makes me feel like I’m wandering the Thai markets all over again. I couldn’t be happier than when I’m there. (Outtakes one and two, just for your viewing pleasure.)

This is Starscream’s innards. I was trying to change the battery, drain the gas, flush the lines, etc. I ended up having to WD-40 the screw (the one out of focus) to get the fuse box up so I could get everything else out. My fingers were sticky as hell by the time I got it all out and switched around. I felt so amazing and accomplished. It didn’t work, but I learned a lot about motorcycle maintenance.

This is two-for if you will. This is my dad pouring cocktails over dinner in the kitchen he built/remodeled. I had a lot of other ideas for this prompt, but I’m happy with how it came out and I’m glad I got to “showcase” my dad’s work. At some point or another I’ll have to get a full shot of the room because it really is gorgeous.

30 day photo challenge – November 9-11

I love taking photographs. I absolutely love it. Currently I am trying to “break into the business” in a way that I had never before considered possible, but lately I’ve had a number of people come to me asking if I’ll take their photos- for money! I’ve taken these jobs and moving forward all money I make from photographing will go straight to a “Nicole needs a Canon 7D” fund. Food photography is my passion (as some of you may have guessed) and ultimately my goal is to take that route.

So, in anticipation of making this more of a life path than just a hobby I enlisted the help of my friend Rob (who I met on the internet years and years ago, but have had the pleasure of visiting as well) to do a 30 day project. A photo a day with a prompt (which I stole from here). I’ll post them in threes, for a total of ten posts. I may fall behind in getting them up here regularly, but rest assured, I will continue to take them.

So, without further adieu, here are the first three. Enjoy!

upside down; คว่ำ 

I tend to put all of my condiments back into my fridge upside down. I hate trying to bang it out of the bottom every time I go to use something. I struggle with this sometimes because most everything falls over as soon as I open it, but I cannot seem to make myself stop.

reflection; เงา

This is Starscream. One of my favorite possessions. I bought him and year and a half ago and currently he’s not running. I also just realized he needs a damn good cleaning as I attempted to get the “car side mirror but on a motorcycle” shot.

inside; ภายใน

When I start doing these sorts of projects I always want to take a picture of something means something to me, but recently I have come to the conclusion that it’s not necessarily about that. I need to take photos just for the sake of taking photos. So when I read the prompt “inside” I looked around my house and found the first thing that had an inside and I used it. Oddly, I really kind of like it.

Informal Photoshoot with David

So my friend David and I have been talking for months about getting together to take some photos. Unforutnately things had not worked out until recently. Yesterday I headed up (down? across?) to the Hyde Park area with camera in hand. It wasn’t anything staged or arranged. We walked around, talked, drank some coffee and he ended up on the other side of the lens. I loved it. I think the photos came out fairly well. I’d like to try again with him with a little more light (ISO at 800+ is too grainy for me), but overall it was wonderful. Now it’s Friday morning and I’m all smiles. Things are on the up and up.
