Turning Vegetarian

Today I picked up the Better Homes and Gardens 365 Vegetarian Meals cookbook. I spent some time browsing Barnes and Nobel and this really did turn out to be one of the best looking books I could find (that said, it was not organized particularly well and if you have any suggestions please let me know!).
